Simple Healthy Greek Yogurt Snack

Hey guys!

I just wanted to share my latest night time snack that I have been having a lot of. I usually have it at night when I am craving sweets and it does the trick.

It is basically Greek yogurt, fruit, honey and Kind oats and honey clusters cereal. In this picture I used:

1/2 cup of low fat Greek yogurt

1/2 Kiwi

Sprinkled Kind oats and honey clusters cereal to taste (don’t go crazy)

Light drizzle of raw honey

I usually add the yogurt, then the cereal, drizzle honey and add the fruit on top. I have also tried this with strawberries and it tastes really good. If you don’t have the cereal at hand just make it without it and it still tastes really good.

I hope you enjoy it.

Renata 🙂

Simple Healthy Ground Beef Casserole

Hey guys!

I have been away for a while because things have been a little crazy and busy but I wanted to update the blog. Hopefully I will be able to post more often.

I made a ground beef casserole the other day that turned out pretty good. I hope you enjoy it, it was super simple to make.

1.5lb lean ground beef or you can use ground turkey.

2 green peppers

1 can of corn

1 can of diced tomatoes (I always look at the nutrition and try to get the one with the least sugar and such)

1 can of organic black beans

Beef/ taco seasoning (I used some McCormick steak house onion burger seasoning because I was tired of taco flavor).

1/2 to 1 cup shredded cheddar cheese or how ever much you would like (if you don’t mind the calories go with more 🙂 ).

How to make it:

Preheat the oven to 350°F.

Spray the pan with oil ( I use olive oil) and cook the beef. While the beef is cooking dice the green peppers. Once the beef is all cooked drain any fat and add the seasoning. I sprinkled seasoning all over the beef and added about 1/4 to 1/2 of water to it as well so its not super dry. If you use an already made taco seasoning those usually come with instructions 🙂

Add the can of diced tomatoes and the green peppers and let it cook for a while so the green peppers can get a little soft ( if you choose not to do this step it is okay, the green peppers will just be crunchier when it is all done).

Add the rest of the ingredients except for the cheese. Mix it well and then add half of the cheese and mix it a little more. Put everything in an oven safe dish and sprinkle the rest of the cheese on top.

Let it bake for 20-30 min or until the cheese melts.

Sweet Quesadilla

Hey guys!

I saw this recipe and decided to make it and it ended up being really good. Here is the link to the original recipe.

One 6″ wheat tortilla ( I cut mine in a circle because the one I had was really big)

1/2 Banana

2 squares of 85% dark chocolate or a dark chocolate of your choice (about 1 tbs)

1 Tbs of natural peanut butter

Raw honey (optional)

Spread the peanut butter on the tortilla then add the banana and sprinkle the chocolate on top. Drizzle a small amount of honey on top of it if you want and fold the tortilla in half.

After you fold it in half put it in a skillet and heat it up until the tortilla looks golden brown and the chocolate has melted.

This is great because you can customize it, next time I am adding some strawberries in there to see what it tastes like.

21 day fix or Hammer and Chisel coffee

I wanted to make a quick post today about coffee. I had been trying different things out for days and trying different recipes and I could not find anything I liked. I love creamer and I had given up on all these recipes until my friend gave me an idea. She suggested that I use canned coconut milk. I tried it and it was great!

I highly recommend it and all I do is put 1/2 a blue container of canned coconut milk (not the coconut milk that can be a regular milk substitute make sure its those that come in a can)  and add a pack of stevia. You can use more milk or less depending on your taste. I had tried coconut oil before but it was just too oily for me and I didn’t like the texture. This did the trick and I can have my daily cup of coffee again.

I hope this helped 😊

Healthy Nacho Salad

Hey guys!!

I was craving nachos this week and I decided to make these 🙂 They are 21 day fix and hammer and chisel approved. I will add the container amounts at the very bottom of the post.

There are a few steps to making this so if you feel like you don’t need to do one of the steps just skip it :). Also, you can make this with as much or as little of every ingredient listed. It’s really up to you.

Corn tortillas (as many as you want, I used 2)

1.5 lb lean ground beef (or ground turkey)

1 tomato

Shredded cheddar cheese (as much as you like or 21 day fix use the amount I listed below)

Lime or lime juice

Tabasco sauce

The chips:

The first thing I made was the tortilla chips. It was super simple to make. First preheat the oven to 350 degrees Fahrenheit. Get some corn tortillas and cut them with a pizza cutter or a knife. Spray a cookie sheet with olive oil and put the tortillas on it (I also sprayed the top of the tortillas). Bake it for 4-6 min on one side and then flipped them and let it bake for 4 or so more minutes.  You will be able to tell when they are ready, they will start getting golden. Make sure you pay attention so they don’t burn.

After they were done I put them in a big bowl, squeezed some lime juice on top as well as some sea salt and tossed it.

Ground beef and seasoning:

For the ground beef I decided to make the seasoning since it is a lot healthier. If you choose not to make your own you can buy the taco seasoning of your choice. I used to always buy the McCormick’s taco seasoning. You can click here and it will take you to the taco seasoning recipe I used.

If you are using a store bought seasoning just follow the instructions. If you decide to use the same one I used all I did was cook the ground beef. After that I drained any fat/water that was left.  Later I added the seasoning along with 1/2 cup of water and let it cook for a little longer on low.

The finished product:

The way I built mine was to first put the tortilla chips on my plate and sprinkle the cheese. After that I microwaved it for about 15-20 seconds so the cheese melted. I added the lettuce, beef, tomatoes and avocado in that order on top of the melted cheese.

21 day fix and Hammer and Chisel plan:

I used 2 baked corn tortillas ( 1 yellow)

1 red container for the ground beef

1 green for the lettuce (you can easily add more if you have extra for that day)

1/2 green of tomatoes

1/2 blue of cheese

1/2 blue of avocado

I hope you guys like it.

Tuna Muffin Cups

Hey guys!

I found a really good recipe on Pinterest and decided to try it. Here is the original recipe but I changed a few things on mine so that I knew exactly how many 21 day fix/ Hammer and Chisel containers it would count as. If you don’t have those programs these taste so good its worth a try 🙂

Processed with VSCOcam with hb1 preset

3/4 cup of diced green peppers (about 1/2 of a green pepper)

1/4 cup of diced onions

1/4 cup of diced carrots

1/4 cup of spinach cut in small pieces

3/4 cup of cheese

2 eggs

2 cans of tuna (drained)

salt, pepper and parsley flakes to taste.

Put everything in a bowl except the cheese and mix it. Make sure you preheat the oven to 350 Fahrenheit.

Get a cup cake pan and evenly pour it in. If you are doing 21 day fix or Hammer and Chisel meal plan make 9 of these.

Sprinkle the cheese evenly over it. Since I am doing the hammer and chisel meal plan I put the cheese in a blue container and evenly sprinkled it on 3 tuna muffins (do it 3 times if you want, that way you know for sure it is as even as you can make it).

Processed with VSCOcam with hb1 preset

Bake it for about 30 minutes at 350 degrees Fahrenheit.  When the cheese on top looked melted and a little crispy I took mine out.

For the 21 day fix and hammer and chisel meal plan 3 tuna muffin cups  count as 1 red, 1 blue and 1/2 a green container.

Strawberry/Banana Shake

Hello guys!

I made this smoothie for breakfast for my daughter the other day, she loves smoothies and they are healthy and super easy to make.

Processed with VSCOcam with hb1 preset

1 cup of milk (you can also add water or almond milk instead)

1/2 a banana

1/2 a cup of frozen or fresh strawberries

1 scoop of vanilla Shakeology (or a vanilla protein powder, since she is a kid I added 1/2 a scoop of Shakeology)

Since I used frozen strawberries I did not add ice but if you use fresh ones just add 3-4 ice cubes.

Ps: if you are interested in getting Shakeology you can go here to learn more.

Quinoa Berries Parfait

Hey guys!

I made this parfait and a lot of people were asking me for the recipe so I will be posting it here. I actually got the recipe from the Hammer and Chisel booklet ( it came with the Hammer and Chisel workout) but modified it a little. If you are interested in getting the workout you can click here

2 cups of cooked quinoa

2 cups of strawberry

1 1/2 cups of blackberries

1/2 cup of blueberries

3 cups of low fat plain greek yogurt

1 Tbs of raw honey (I didn’t add this it but you can)

I put all the fruit in a bowl and mixed it then put each item in the designated container (if you don’t have these you can probably look up how many cups they each are).

Next all I did was layer those twice. Quinoa first, then yogurt then the berries.

This recipe counts as a red, yellow and purple container.

Hello World!

My plan for this blog is to post health related things such as healthy recipes and workouts. Right now I am doing a fitness program called Hammer and Chisel and will be posting the recipes I make and really like on this page.
