Simple Healthy Greek Yogurt Snack

I just wanted to share my latest night time snack that I have been having a lot of. I usually have it at night when I am craving sweets and it does the trick.

It is basically Greek yogurt, fruit, honey and Kind oats and honey clusters cereal. In this picture I used:

1/2 cup of low fat Greek yogurt

1/2 Kiwi

Sprinkled Kind oats and honey clusters cereal to taste (don’t go crazy)

Light drizzle of raw honey

I usually add the yogurt, then the cereal, drizzle honey and add the fruit on top. I have also tried this with strawberries and it tastes really good. If you don’t have the cereal at hand just make it without it and it still tastes really good.

Simple Healthy Ground Beef Casserole

I have been away for a while because things have been a little crazy and busy but I wanted to update the blog. Hopefully I will be able to post more often.

 

I made a ground beef casserole the other day that turned out pretty good. I hope you enjoy it, it was super simple to make.

Ingredients:

1.5lb lean ground beef or you can use ground turkey.

2 green peppers

1 can of corn

1 can of diced tomatoes (I always look at the nutrition and try to get the one with the least sugar and such)

1 can of organic black beans

Beef/ taco seasoning (I used some McCormick steak house onion burger seasoning because I was tired of taco flavor).

1/2 to 1 cup shredded cheddar cheese or how ever much you would like (if you don’t mind the calories go with more 🙂 ).

 

How to make it:

Preheat the oven to 350°F.

 

Spray the pan with oil ( I use olive oil) and cook the beef. While the beef is cooking dice the green peppers. Once the beef is all cooked drain any fat and add the seasoning. I sprinkled seasoning all over the beef and added about 1/4 to 1/2 of water to it as well so its not super dry. If you use an already made taco seasoning those usually come with instructions 🙂

Add the can of diced tomatoes and the green peppers and let it cook for a while so the green peppers can get a little soft ( if you choose not to do this step it is okay, the green peppers will just be crunchier when it is all done).

Add the rest of the ingredients except for the cheese. Mix it well and then add half of the cheese and mix it a little more. Put everything in an oven safe dish and sprinkle the rest of the cheese on top.

Let it bake for 20-30 min or until the cheese melts.
