I found a really good recipe on Pinterest and decided to try it. Here is the original recipe but I changed a few things on mine so that I knew exactly how many 21 day fix/ Hammer and Chisel containers it would count as. If you don’t have those programs these taste so good its worth a try 🙂
3/4 cup of diced green peppers (about 1/2 of a green pepper)
1/4 cup of diced onions
1/4 cup of diced carrots
1/4 cup of spinach cut in small pieces
3/4 cup of cheese
2 cans of tuna (drained)
salt, pepper and parsley flakes to taste.
Put everything in a bowl except the cheese and mix it. Make sure you preheat the oven to 350 Fahrenheit.
Get a cup cake pan and evenly pour it in. If you are doing 21 day fix or Hammer and Chisel meal plan make 9 of these.
Sprinkle the cheese evenly over it. Since I am doing the hammer and chisel meal plan I put the cheese in a blue container and evenly sprinkled it on 3 tuna muffins (do it 3 times if you want, that way you know for sure it is as even as you can make it).
Bake it for about 30 minutes at 350 degrees Fahrenheit. When the cheese on top looked melted and a little crispy I took mine out.
For the 21 day fix and hammer and chisel meal plan 3 tuna muffin cups count as 1 red, 1 blue and 1/2 a green container.
